Double Mango Pudding
Ingredients
- 3/4 cup of boiling water
- 15 oz of mango pulp
- 1/2 cup of cold water
- 1 cup diced, fresh mango
- 1 cup whipping cream
- 1 1/2 KNOX gelatin packages
- 1/2 cup sugar
Directions
- Dissolve sugar in boiling water over medium to low heat
- Dissolve the gelatin in cold water and add to the sugar water, mix thoroughly and remove from heat
- Cool to room temperature then add the mango pull and whipping cream, mix thouroughly
- Add the diced mango
- Transfer to a serving dish or individual dishes and chill overnight
- Top with a dollop of whipped cream
